Join us for a four-day, hands-on workshop exploring craft chocolate from bean to finished bar, led by Chef Stephen Durfee, our Director of Curriculum. You’ll learn each step of small-batch chocolate making—sorting, roasting, cracking, winnowing, grinding, tempering, molding, and wrapping—while creating your own 2-kilo batch of chocolate to take home as finished bars and confections.
The workshop includes:

-Guided tastings and technical discussions
-Guest lectures on sourcing, fermentation, and chocolate history
-A collaborative 20+ kilo batch made as a group
-Daily pastries, chocolate drinks, and curated meals
